Heirloom Chickpea Salad

I love me a tomato, especially one of the heirloom variety. But, it wasn't always so. For most of my life I hated tomatos, with a passion. I didn't like the smell, I didn't like the texture, the taste didn't even thrill me. Adding them accidentally to my dinner plate could literally bring me to tears (I was a, er, dramatic, child). It took moving to Rome when I was 20 (I'm not kidding) for me to come around and start to love this versatile fruit. Now I can't get enough, so I can't wait to give this recipe a go.



Heirloom Chickpea Salad

INGREDIENTS:
  • heirloom tomatos
  • chickpeas
  • basil
  • balsamic vinegar
  • extra virgin olive oil
  • sea salt
  • fresh cracked pepper

METHOD:
What you see is what you get.  combine ingredients to your taste and enjoy!  However, using high quality, organic, fresh ingredients will ensure it tastes as good as it looks.  When the flavors are simple like this you really need to have high quality ingredients to get the most out of it.  Just let them sing, and enjoy!
