Ingredients
- 1 cup cooked quinoa (or brown rice)
- 3/4 cup all-purpose flour (I prefer whole wheat)
- 2 teaspoons baking powder
- 1/2 teaspoon coarse salt
- 1 large egg, plus 1 large egg white
- 1 tablespoon unsalted butter, melted, plus more for skillet
- 1/4 cup low-fat milk
- 2 tablespoons pure maple syrup (plus more for serving)
- Fresh fruit or fruit preserves (optional), for serving
Directions:
In a bowl, whisk the quinoa, flour, baking powder, and salt together. In another bowl, whisk together the egg, egg white, butter, milk, and syrup, keep whisking until smooth. Combine the wet and dry mixtures together in a single bowl to complete your batter.
Heat a lightly buttered nonstick skillet or griddle over medium-high. Drop heaping tablespoonfuls of your batter into skillet. Cook until bubbles appear on top. Flip cakes and cook until golden brown on underside. Wipe skillet clean and repeat - reduce heat to medium if overbrowning. Serve with maple syrup and/or fresh fruit or preserves if desired.

I love maple! And pancakes! People are writing in magazines that quinoa is healthy and also makes one less hungry :), so it would be good for diets. I desperatley need a diet :) I guess I should try this recipe! Sorry I didn't comment before, I was very jet lagged last week, but now things are normal again!
