Mojito Popsicles

It's heating up out there ladies and germs - so let's find a saucy way to cool down. How about a tempting treat that only tastes sinful?


Mojito Popsicles

Place 90g of water and 55g of sugar in a small saucepan. Bring to boil for 1 minute. Allow to cool completely to make a sugar syrup. Meanwhile, mix 120g coconut milk with 300g organic plain (natural) yogurt, 1/2 lime juice, and the zest of 1 lime, finely grated. Add the sugar syrup into the milk and yogurt mix, whisk to combine. Pour into 6 small glasses or divide between popsicle molds and cover with aluminum foil. Make a small cut in the foil and insert a wooden popsicle stick. Freeze for 4-5 hours or overnight. Enjoy!
