Heirloom Tomato Mojito

So I'm all for celebrating the ingredients of the season, and currently heirloom tomatoes are in season. So what better way to celebrate them than by putting them in a cocktail? This mojito would be a fun summery twist on a bloody mary for any Mother's Day brunch you might be planing.

1 heirloom tomato, sliced
3/4 ounce freshly squeezed lime juice
1 slice jalapeño
1/4 ounce black pepper basil syrup
5 basil leaves
2 ounces gin or vodka
1/4 ounce citrus champagne vinegar
Muddle the tomato, jalapeño, lime juice and syrup. Add basil leaves, ice, and gin. Shake well. Top with champagne vinegar. Cheers!
